Percy
will supervise the F&B teams while coordinating operations and
recurring activities, within the department to insure and control its
efficiency and profitability.
Percy has a large
housing background. He started his career at Lemuria Resort of Praslin
from 2001 until 2002 as a Bar supervisor. From 2003 to 2005, Percy
joined the ACCOR Family as Banquet & Beverage Manager at Novotel,
World Trade Centre DUBAI. Percy was named F&B Manager at Coco Palm
Dhunikholhu Maldives from 2005 to 2006 then at Labriz, Silhouette
resorts and Spa from 2006 to 2007. Percy also worked as F&B manager
from 2007 to 2008 at Hulhule Isand Hotel Maldives. During 3 years
(2008-2010) he was the F&B Manager of The Kairaba Gambia West
Africa. His professional career continued at the Constance Moofushi
Resort as F&B Director from 2010 to 2011. Percy was also Executive
Assistant Manager F&B at the Lux * Le Morne Mauritius from 2011 to
2015 before being named as Resident Manager, position he kept from 2015
to 2018. Percy was Operation Director for the Royal St Lawrence Private
Yatch Club & Resort, Montréal since his arrival at Montréal until
today.
Percy obtained a BEPC equivalent
at O levels in France. He also obtained a CAP & BEP Equivalent to a
Diploma in Hotel & Management at Lycée Privé St Joseph, Villefranche
de Rouergue, France as well as a Master in Food And Beverages
Management (specializations in Bar) at Lycée Charles de Gaulles, Séte,
France
