Task description :
- Cook meals on a regular basis and supervise cooks
- Responsible to supervise kitchen shift daily operations and to ensure compliance with all food and beverage policies, standards and procedures.
- Helping the Executive Chef in menu development and costing
- Ensuring that food and labour costs are managed properly and effectively
- Establishing and maintaining open, collaborative relationships with associates and ensuring that associates do the same within the team
- Maintaining purchasing, receiving and food storage standards.
- Ensuring compliance with food handling and sanitation standards.
- Estimating daily production needs on a weekly basis and communicating production needs to kitchen personnel daily
- Professional cooking diploma is required ;
- At least 18 months of work experience as an Sous-Chef are required ;
- Knowledge of French or English ;
- Extensive knowledge of Lebanese cuisine techniques and meals is required.
