DEV Hotel and Conference Centre is looking for an outstanding individual to join us in the position of Second cook

The DEV facility is home to the largest hotel and conference center in Eastern Ontario. The site is located on 75 acres of indoor and outdoor space in Cornwall, Ontario and is ideal for gatherings and conferences of any size. The hotel offers over 500 guest rooms, as well as 70,000 square feet of dynamic and flexible meeting space.  For decades, the facility has continued to evolve and is the site of choice for corporate conferences, sporting events, government training programs, and more.

The successful candidate will report to the Lead cook and actively participate in the overall direction and future plans of the property.  With a focus on both our guests and our employees, which is at the heart of everything we do, this position is key to our ever evolving and exciting future.

Requirements

Essential Functions

Manage the daily functions of the kitchen with the supervision of the sous chef and the Executive Chef.

Reporting to the Lead cook, the position overall is responsible for:

  • Provide the highest quality of service to customers at all times
  • Be able to answer any recipe and production questions  

  • Assures safe, quality food products are maintained at all times
  • Implements and maintains all standards set by Sodexo policy
  • Produces and maintains acceptable food quality control for all food products
  • Follows menus, recipes, methods and specifications as directed by corporate policy and Executive Chef 
  • Maintain menu and food quality up to standards set by the Executive Chef
  • Follows the HACCP procedures for food quality and safety
  • Constantly strives to upgrade the food quality and presentation and establish the necessary controls that will assure a high level of quality and consistency
  • Controls food waste and insures unused food is returned to the storeroom on a daily basis
  • Enforces “clean as you go” work habits

With the support and direction of our management company, on behalf of our owners, we are seeking a generalist, with leadership experience in a multi department organization. Experience in the hospitality industry is an advantage as is experience with collective bargaining.
