Head Chef

Based in Vancouver, British Columbia, 49th Parallel endeavours to sustainably source and craft exceptional coffee. The Head chef will be responsible for the company’s BoH operations in Montreal and be required to:


Café Performance and Management:

  • Manage daily kitchen operations (starting with one location and progressing to others as more locations open in Montreal)

·        Lead and create the weekly schedule and monitor labour cost and targets

·        Lead pastry and savory kitchens on products and recipes

  • Track food waste and monitor food cost

  • Ensure 49th Parallel service standards

  • Complete ongoing quality checks for customer service, sanitation and food quality

  • Apply FIFO standards

  • Ensure Health and safety standards


Recipe Development:

  • Assist Exec chef in developing seasonal sweet and savory menu items

  • Create/test new recipes and track related food costs

  • Create training guide for new menu items


People Management, Training and Development:

  • Create, manage and lead a team of pastry and line cooks

  • Work closely with BoH team and promote the 49th Parallel culture

  • Develop training guidelines and requirements for new products or staff

  • Assist FoH leads and encourage positive relationship between FoH and BoH

  • Assist team leads with inventory reports


·       Minimum 5 years experience in similar role

·       Strong knowledge of pastry techniques and savoury food preparation

·       Excellent team player and communicator

·       Proven experience managing a team leading by example

·       Driver’s license a strong asset

·       MAPAQ certification an asset

·       Ability to communicate in French and English

·       Able and willing to travel to Vancouver for 2-week training


Salary/advantages/other details:

·       Salaried position ($40,000-50,000 / year, to be discussed, based on experience)
