Job description

As part of the opening of its Ben & Florentine restaurant and tapas bar, Ruby Foo’s is looking for its new Director of Food & Beverage.

The Director will be responsible for the opening of the restaurant and bar and, subsequently, for all operations related to food and beverage services within the hotel, including banquets, meetings, and events. They will oversee the franchised restaurant (breakfast and dinner services) and the tapas bar in the evening, ensuring a high-quality service offering aligned with the hotel's image and standards.

Main Responsibilities:Strategy & Management

  • Define and implement the commercial and operational strategy for the Food & Beverage department, including events.
  • Recruit, train, and lead teams, ensuring cohesion and consistent engagement.

Operations Management

  • Supervise the daily operations of the restaurant (breakfast, lunch, and dinner services) and ensure service excellence and customer satisfaction.
  • Manage the evening tapas bar, developing an attractive and innovative offering.
  • Coordinate the organization and execution of events and banquets, working closely with other hotel departments.

Financial & Cost Control

  • Develop and monitor budgets, control costs, and optimize operational profitability.
  • Lead contract negotiations with suppliers while ensuring quality products and services.

Quality & Compliance

  • Ensure compliance with hygiene, safety, and quality standards.
  • Implement continuous improvement actions and monitor service performance.

Requirements

Profile Sought:Education & Experience

  • Degree in hospitality, restaurant management, or a related field (Bachelor’s degree minimum).
  • Proven experience in a similar role, ideally in a 4-star or upscale environment.

Technical & Managerial Skills

  • Excellent knowledge of the restaurant industry and hotel standards.
  • Ability to manage multiple activities simultaneously and lead complex projects.
  • Proficiency in IT tools and management software.

Personal Qualities

  • Strong leadership, organizational skills, and analytical mindset.
  • Excellent interpersonal skills, service-oriented, and customer-focused.
  • Fluent in English; knowledge of other languages is a plus.

Availability & Flexibility

  • Willingness to work flexible hours, including evenings, weekends, and holidays.
