Description

Considering the values and the business culture of Brasserie Harricana, the candidate will be responsible to ensure high quality standards while respecting the pace of our service and assume the responsibilities of an executive chef while taking an integral and active role withing the team.

Functions and responsabilities 

Generally ensure the exécution or executes:

·       Prep and cook before and during service;

·       Ensures all kitchen operations ;

·       Applies all established standards and procedures ;

·       Assures and maintains high quality produces ;

·       Apply MAPAQ salubrity and hygene standards ;

·       Responsible of food inventory ;

·       Ensure a clean work environment ;

·       Food cost calculation, orders, table d’hôte menu elaboration ;

·       In charge of human ressources, hiring, training, and labour cost for kitchen staff

·       Ensure great relations with suppliers and responsible of orders ;

·       Food cost and Labour management

·       Ensure great communication with all staff members, management and ownership

Requirements

Expériences and qualifications

·       Kitchen professional training, an asset

·       MAPAQ certification, an asset

·       2-3 years experiences in a similar position ;

·       Fast execution of tasks

·       Dynamic, positive attitude positive and teamwork;

·       Excellent sense of priority and communications

·       Disciplined and rigorous

·       Multi-tasking
